Green Globe Artichoke Seeds – Heirloom Non-GMO

Cynara cardunculus var. scolymus

Grow your own beautiful and flavorful Green Globe Artichokes from seed. This classic heirloom artichoke variety is known for producing large green buds with tender, nutty, delicious hearts. Green Globe is a longtime favorite for home gardeners and is often grown as a perennial in warmer zones or as an annual in cooler climates.

Native to the Mediterranean region, artichokes have been grown for centuries for their edible flower buds and ornamental garden beauty. The plants produce bold, upright, silvery-green foliage and sturdy stalks topped with green artichoke buds. If left unharvested, the buds may open into striking purple thistle-like flowers, adding beauty and pollinator interest to the garden.

How to Start Green Globe Artichoke Seeds

Start seeds indoors 8–12 weeks before your last expected frost for the strongest start, or sow outdoors after the danger of frost has passed. Sow 2–3 seeds per cell or small pot, about 1/4 inch deep. Keep soil evenly moist, warm, and well-lit until germination.

Once seedlings are strong enough to transplant, move them outdoors after hardening off. Give each plant plenty of room, as mature artichoke plants can grow large, often reaching up to 3–4 feet tall and spreading several feet wide.

Garden Care Tips

Green Globe Artichokes grow best in fertile, compost-rich, well-drained soil with consistent moisture. Avoid overwatering or soggy soil, which may cause root problems. In warmer climates, adding mulch around the base of the plant can help keep the soil cooler and retain moisture.

Artichokes are heavy feeders and benefit from regular fertilizing during the growing season. Monitor plants for common garden pests such as aphids, mites, and earwigs.

Harvesting Green Globe Artichokes

Harvest artichoke buds when the buds are firm and the outer bracts begin to slightly open. Cut the thick stem with pruning shears or a sharp knife. The largest top bud usually matures first, followed by smaller side buds along the stalk.

For eating, harvest before the bud fully opens. If left on the plant, the bud can bloom into a beautiful purple thistle-like flower, but it will no longer be ideal for eating.

Cooking & Use

Green Globe Artichokes are loved for their tender hearts and rich, nutty flavor. They can be steamed, boiled, grilled, roasted, or served with butter, garlic sauce, lemon, or dipping sauces. This variety is also a beautiful addition to edible landscapes and ornamental vegetable gardens.

Important Growing Note

Germination and growth results may vary depending on temperature, soil, moisture, sunlight, and growing conditions. Artichokes need space, steady moisture, and nutrient-rich soil for best results. In cooler zones, they are commonly grown as annuals; in warmer zones, they may return as perennials.
