Pak Choy Ching Chang is a baby bok choy variety prized for its compact size, tender texture, and attractive medium green leaves with smooth green stems. This fast-growing cool-season vegetable produces small, neat heads that can be harvested when they are just about 5 inches tall, making it a great choice for home gardens, raised beds, and container growing. Plants are typically ready for harvest in about 50 days and are ideal for stir-fries, soups, steaming, and fresh cooking.
