Pak Choy Ching Chang is a baby bok choy variety prized for its compact size, tender texture, and attractive medium green leaves with smooth green stems. This fast-growing cool-season vegetable produces small, neat heads that can be harvested when they are just about 5 inches tall, making it a great choice for home gardens, raised beds, and container growing. Plants are typically ready for harvest in about 50 days and are ideal for stir-fries, soups, steaming, and fresh cooking. Easy to grow and productive, Pak Choy Ching Chang is a great option for spring and fall planting.

Timing: Sow from about 4 weeks before last frost through spring, and again in late summer for fall harvest
Starting: Sow 1/4–1/2 inch deep; thin to 6–8 inches apart
